L’artichaut, champion de la lutte contre le vieillissement cellulaire

Plusieurs bénéfices sur la santé sont reconnus à ce légume vert. Il contribue à lutter contre le dérèglement de la flore intestinale. En effet, grâce aux fibres qu’il contient, l’artichaut facilite le transit intestinal et aiderait à lutter contre le cancer du côlon.
Les polyphénols de l’artichaut aideraient aussi à lutter contre le cancer du foie en provoquant l’apoptose des cellules cancéreuses hépatiques.
Son atout majeur est sa richesse en polyphénols qui lui vaut d’être l’un des légumes les plus riches en antioxydants. Les polyphénols les plus importants de l’artichaut sont la cynarine et la lutéoline.
La cynarine est utilisée dans les préparations pharmaceutiques car elle stimule la sécrétion de bile et améliore la digestion. La lutéoline pourrait inhiber la synthèse du « mauvais » cholestérol et améliorer le fonctionnement des vaisseaux sanguins. Elle participerait ainsi à la prévention des maladies cardio-vasculaires.
